Application of molecular distillation monoglyceride

 (1) Application in protein beverages:

Molecularly distilled monoglycerides added to fat and protein beverages (coconut milk, peanut milk, soy milk, almond milk, cocoa powder, soy milk crystals) can significantly improve the solubility and stability, prevent precipitation, separation, and have a function of aroma forming and coloring. Monoglyceride has good thermal stability and is very suitable for the production of various beverages.


(2) Application in ice cream:

Molecularly distilled monoglyceride is the most ideal emulsifier and stabilizer for making high-quality ice cream. It can improve the dispersibility of fat and make the fat particles fine and uniform; promote the interaction of fat and protein; prevent and control the formation of large ice crystals and make the texture fine and smooth; improve product shape retention ability and shelf-life; improve mouth meltability.


(3) Application in grease products:

Used in margarine, butter, shortening, peanut butter, coconut butter, oyster sauce and other products, it can adjust the crystallization of oils, prevent oil separation and layering, and improve product quality; used in condensed milk, malted milk, cheese, instant whole milk products such as fat milk powder, it can improve instant dissolution and prevent product precipitation, agglomeration and granulation; at the same time, it can also be used in powdered fat products, such as coffee mate as emulsifier.


(4) Application in bread products:

It can promote the rapid fermentation of bread, increase the volume of bread, improve the structure of the dough, and extend the shelf life of bread. The reference dosage is 0.3%.


(5) Application in candy and chocolate:

Not only can the sugar and fat raw materials be mixed quickly and uniformly, but also do not separate after cooling; thereby preventing the phenomenon of graining, granulation and oil loss. It can also prevent the product from sticking to teeth, adhesion and deformation, and improve the moisture resistance ability of the product.
