Application of Polyglycerol Fatty Acid Ester in Food

This product can be mainly used as emulsifier; stabilizer; dispersant; thickener; defoamer; quality improver; oil crystal regulator; chocolate consistency regulator; bactericide. According to EEC recommendations, it can be used for cheese cake, cake pre-mixed powder, heavy oil pudding etc. It can still be used as a turbidity inhibitor for vegetable oils (H.F.A.). Its biggest feature is that it is quite stable under acidic conditions and has good heat resistance stability. It is not prone to hydrolysis. Meanwhile, it is suitable for the emulsification of yogurt, sour cream, acidic beverages, mayonnaise, etc. The viscosity of the formed emulsion is also lower than other emulsifiers. In chocolate production, polyglycerol esters are more effective than soy phospholipids in reducing viscosity. The lipophilic polyglyceride has the effect of inhibiting the formation of crystals, such as adding triglyceride fatty acid ester.
